The best way would be to rent a boat to take you and your friends over to Sandfly Island and back again in the evening! I'm sure you could find a very reasonably priced boat next to the yachtclub where all the local boats leave out to the islands. Simon and his family will be happy to provide a local lunch, but they have no fridge so you'd have to bring over cold drinks in a cooler.
